Chicken and Rice Skillet with Broccoli – this one pot meal is a cheap and easy dinner that won’t break the budget! 

This week I have been running around like a chicken with my head cut off – no pun intended. Work and my personal life are just so busy right now that I barely have any energy when I get home in the evenings. If you’re anything like me, you look for easy, no fuss dinners during the work week. That’s why one pot recipes are so clutch. My recipe for this Chicken and Rice Skillet is so easy to make and even easier to clean up. And did I mention it’s easy on your wallet too?

My family eats grilled chicken for dinner at least twice a week… and sometimes we pack it for lunch. YAWN. Austin always jokes about how I hate chicken but it’s just that I get so bored with it! That’s why, I am always looking for ways to spice up dinner. I’ve added a ton of garlic to this chicken recipe so it is packed with flavor! But not only is it flavorful, it’s hearty and even better left over.

A few things I always have in my pantry: white rice, chicken broth, onion and a can of diced tomatoes. I can easily whip up a few dishes with these base ingredients. Add chicken, garlic and broccoli and BOOM! It’s a cheap one pot dinner under $20 that will feed a family (or make some pretty mean left overs).
